Why can't digital capture "warmth" as well as analog?

It can. The engineers just have to do it carefully. Most engineers wanted to get away from "warmth" as soon as they could when the digital era started. They found that they could EQ as much treble boost as their slightly deaf ears could need, thus digital got a bad name.
The analog colorations that people mistake for warmth are possible to get in digital as well. Most engineers won't do it because they feel that it degrades the sound (which it does to some extent).
